Description:

The Shun Premier Tim Mälzer series was created to meet the needs of professional chefs. This top quality series, characterized by excellent materials and a new and impactful aesthetic. The blade has three different surfaces: from the back to the center, the surface is hammered, a process known in Japan as Tsuchime, then we move on to a matte damask, typically Shun up to the mirror-polished precision thread.
This very complex blade has a particularly hard and resistant steel core in order to ensure excellent sharpening over time.
Mottled medium brown walnut handle suitable for both right and left handed users.

The word Santoku comes from the Japanese term for "three virtues": cutting, mincing, mincing and dicing. The Santoku knife unlike the chef's knife has a wider, blunt blade and a back that curves downwards.


Lama:

The core of the Shun Premier blade is made of extremely hard VG Max steel and is encased in 32 layers of Damascus steel. This combination of steels makes the blade hard and elastic at the same time. Its symmetrical sharpening thanks to its lightness guarantees clean and precise cuts. The hammered surface not only has an aesthetic sense, but facilitates, thanks to the small air gap that is created, the detachment of the cut food from the blade.



Handle:

Handle made of mottled medium brown walnut. The handle, thanks to its symmetrical shape, is suitable for both right and left handed users. The through tang ensures stability and balance during cutting. A particular detail, the end of the handle is engraved with the bull's head, the logo of the professional chef Tim Mälzer.
